Are you a restaurant or bar owner looking to update your spirit and cocktail program? Scofflaws Den has to knowledge and talent to take your existing concept, or, move in a completely new direction, and create a bar program that is profitable and current with today’s drinking tastes.
We begin the process with an in depth analysis of your individual aspirations, customer base, geographic location, restaurant/bar concept, local competition and any other variables necessary. This process should take two consultations and then completion of menu items to follow quickly thereafter. Next,bartenders and wait staff will be trained extensively on the background and flavor profiles of individual spirits and the on-menu cocktails. Additionally, bartending staff will be trained on proper technique and tools which create speed and precision behind the bar fostering an increase in drinks served with a minimum of service waste. Less waste plus more drinks sold is a formula for increased profits. Furthermore, we will analyze the individual bar stations and set-ups to make recommendations for increased service efficiency. Our services do not stop at opening night! If desired, we will arrange a quality control period where we will evaluate your staff’s performance and retrain as necessary.
Our bar program development services are staffed by a minimum of two Scofflaws Den members. This allows for an increase in collaborative assessment and dual training sessions effectively halving the training time. Our pricing for program development is as follows:
Concept Evaluation/Menu Consultation: To understand the concept and direction of your program or project as discussed above. The goal is to correctly identify consulting needs and completion of these items.
- $100 per hour
- $50 per cocktail
- $360 for 8 cocktails
- $200 first hour of training; $150 every hour after.
NOTE: Travel costs and lodging, if necessary, not included in pricing.
